Northeast · 2 nights · Late December to February for ice. June for a mild, green visit without the festival.
Harbin
A northeastern winter capital that justifies the coat you do not own yet.

Ice, a Russian grid, dumplings
Harbin in January is a decision, not a detour. The Ice and Snow World is an evening ticket and a real cold — minus twenty is ordinary — and Central Avenue's stone buildings make more sense with snow on them than in July. Outside festival season the city is a pleasant, hearty, less-visited stop for dumplings, smoked meats, and a riverfront, but it is no longer the reason to fly this far north. Dress as if you will stand still for an hour, because you will. Two nights covers the ice, the church street, and a long breakfast.
See
Ice and Snow World 冰雪大世界
Night visit. Tickets are pricey and the site is huge. Hand warmers and real boots matter more than a cute coat.
Central Avenue and St. Sophia 中央大街 · 圣索菲亚
The historic main street and the brick cathedral. Daytime, when your face can feel itself.
Siberian Tiger Park, if that is your interest 东北虎林园
A drive-through park. Know what you are visiting: it is not a quiet sanctuary walk.
Songhua riverfront 松花江
Winter ice, summer promenade. A short walk from Central Avenue when you need to move again.
Eat
Dumplings
The northeast boils them by the dozen. Order a mixed basket and a vinegar-garlic dip.
Guobaorou
Sweet-sour crispy pork. Harbin's version is the one other cities are imitating.
Sausage and smoked platters
Russian-influenced red sausage from a counter on Central Avenue. Eat it outside, quickly, before it freezes.
